Rizling rýnsky a wine for years to come
Limestone, the confluence of the Danube and Morava, and a winemaker who trusts time. Cool minerality and bright acidity. Give it a few minutes in the glass and it starts to open.
The grapes for this wine come from the Purweg site, on the southeast slopes above the confluence of the Danube and Morava. Its tone comes from the limestone bedrock, which translates into the wine as minerality and firm structure.
We farm the vineyard under certified organic rules, following biodynamic principles and without synthetic chemistry. Draft horses work the rows and the soil stays full of life. That is where everything begins: living soil and healthy grapes.
It opens slowly
A wine that opens in the glass.
At first it can seem yeasty and reserved. Let it breathe in the glass for a few minutes and it gradually unfolds into its full nose and palate.
Patience as technology
- Step 01
Hand harvest into small crates
We pick the grapes strictly by hand into small crates, carefully selecting healthy bunches. Only the best makes it into the cellar.
- Step 02
Spontaneous fermentation
The must ferments on its own, only with the wild yeasts the grapes bring in from the vineyard. No added cultures, no hurry.
- Step 03
Barrel and amphora
It matures on its own lees in terracotta amphorae and wooden barrels, without fining or filtration, with sulfur kept to a minimum. Just Riesling and time.
