The Burgundian method

Pinot Noir the most important red in the house

The most important red variety at our winery. It is a wine that needs more patience than the others. A clean, expressive Pinot that does not blend into the crowd.

With Pinot we work the Burgundian way: selection massale. Instead of the clones that are the norm in modern vineyards, we take cuttings straight from the best vines in the vineyard. The result is a genetically more diverse vineyard where no two vines are exactly alike.

The vines stand on a limestone terrace in the Goldeck site, and we farm the vineyard organically and biodynamically. Part of the bunches goes into the tank whole, stems and all. The stems add structure and a peppery, caraway line that ties this Pinot, in the best sense, to its Burgundian prototype. The must ferments spontaneously, only on wild yeasts, and maturing takes ten months in barrel and amphora.

Higher alcohol and firm structure set it apart from the “polished” Pinots. A bold wine you will not miss in the glass.

    Part of the harvest is not destemmed. The stems add structure, spice and a caraway tone on the finish.

    10 months · barrel and amphora

    Slow maturing in Austrian Stockinger barrels and terracotta amphorae. Time does Pinot good, and we give it as much as it needs.

Pinot needs far more time to mature than our other wines. But when it arrives, it is worth it.

At the table

Roast duck, game with forest mushrooms, fine mushroom dishes, lamb carpaccio, long aged cheeses. Serve lightly chilled at 14 to 16 °C and give the bottle room to breathe.
