Three things a wine is born from

Our head winemaker says an honestly made wine captures three things. Time, place, and the person behind it. Our job is to leave those three things uncovered. No fining, no filtering, no added yeasts, no aromatic makeup. Grapes from the slope, wild yeasts from the vineyard, time in oak, terracotta, and granite. Sulfur only in a homeopathic dose.

We are a certified organic winery and have worked biodynamically since 2017, using preparations made by the Demeter method, including the cow horn preparation. We use no herbicides or synthetic fertilizers, our draft horses Uriáš and Barin work between the rows, and the compost comes from the manure of our own Jersey cows. To us, the grower and the winemaker are only guides. Nature holds the helm.

01 · Vineyard

Biodynamics and humility toward the soil

We have followed the biodynamic path since 2017. We see the vineyard as a living, breathing organism. Soil, plants, insects, and fungi form one web that must not be broken.

Instead of heavy machinery, our draft horses Uriáš and Barin move between the rows. Their hooves do not compact the soil, they respect the life within it. We prepare our own preparations, composts, and herbal infusions to give the earth back the balance and strength it needs to cope with climate extremes.

02 · Cellar

Spontaneous fermentation

No purchased yeasts, no enzymes. The grapes ferment on their own, with the wild yeasts they bring in from the vineyard. That is why every vintage is different. And that is exactly how it should be.

We do not fine or filter our wines. We give them time to clear on their own. We add sulfur only in homeopathic amounts, often none at all. When the grapes are healthy and the fermentation clean, the wine needs no crutches.

03 · Qvevri

Qvevri. Eight thousand years of clay

Qvevri je hlinená nádoba vajcovitého tvaru, akú v Gruzínsku zakopávajú do zeme už vyše osemtisíc rokov. My ju používame tak, ako sa používala vždy. Mušt v nej kvasí a zreje v dotyku so šupkami, kôstkami a vlastnými kvasnicami, bez ocele, bez chladenia, v úplnom pokoji.

Clay breathes more slowly than wood and differently than terracotta. Wine in a qvevri gains a firmer structure, fine tannin, and a depth that recalls the very earth below Devín. The buried vessel holds a steady temperature, so the fermentation moves at its own pace. That is exactly what we want from our materials. Let them do the work while we stay out of their way.

04 · Materials

Only what breathes

In our cellar you will hear no clinking of stainless steel and no hum of filtration equipment. We work only with natural materials that let the wine breathe and develop in its purest form.

We use rare Austrian Stockinger barrels, Italian terracotta amphorae, and our "stone of life", a granite fermentation vessel that gives the wine the minerality of Devín itself.

Minimal intervention

We bottle with a minimum of added sulfur, under 50 mg/l total. Far less than the organic wine standard allows. We do not filter or fine. The wine clears by itself, it just needs time.

The vineyards lie on southwest facing slopes above the confluence of the Danube and the Morava, at 200 to 300 meters above sea level. Goldeck and Purweg are names from 19th century maps. We dusted them off when we restored the overgrown parcels in 2014 and started over.

Underfoot lies limestone bedrock with fragments of granite and a loess topsoil. The waters of the Danube and the Morava cool the slopes at night, the sun warms them by day. That is the Devín terroir, a taste you will recognize in the glass.
